Chocolate No-Bake Snack Bars

If you love chocolate, but are trying to stay healthy, then these no-bake bars are for you.  I crave chocolate 23 out of the 24 hours of the day, but am really trying to limit myself to dark chocolate, 70% cacao and up.  But sometimes this stuff can be bitter, so I was trying to find a way to like it more.  Behold, the Chocolate No-Bake Snack Bars:

  • 85% dark chocolate
  • plain oat cereal (I used Aldi’s Crispy Oats)
  • flax seeds
  • unsweetened coconut
  • 1/2 cup raw honey
  • 1/2 cup coconut oil
  • 1/2 cup peanut butter
  • 1 tbsp. vanilla extract
  • 1 tsp. cinnamon
  1. Combine the dark chocolate, peanut butter, honey, coconut oil, vanilla extract, and cinnamon in a saucepan and cook on low heat until melted
  2. Line a glass baking dish with parchment paper (pick your dish size based on how thin or thick you want your bars)
  3. Add the oat cereal and flax seeds to the melted mixture and stir in
  4. Pour the mixture onto the parchment paper and spread evenly
  5. Top with coconut
  6. Let set on counter for about 5 minutes, then transfer to the fridge

They set up quickly and you can cut them in about a half hour!
